Step 1
Sauté diced onion in niter kibbeh until very soft and golden, about 15 minutes.

Add garlic, berbere spice, and tomatoes, cooking for 5 minutes.
Step 3
Gradually whisk in shiro powder with water to avoid lumps.
Step 4
Simmer on low heat for 15-20 minutes, stirring frequently, until thick and creamy. Serve with injera.
