A delicate South Indian vindaloo of braised lobster nestled with aromatic garam masala and sweet jaggery.
Step 1
Marinate the lobster tail in vinegar, garlic, ginger, chili powder, and cumin for at least 2 hours.
Step 2
Sauté onion and mustard seeds in oil until the seeds pop and the onion softens.
Step 3
Add the marinated lobster tail and brown on all sides.
Step 4
Add chopped tomatoes, turmeric, and water, then simmer for 40 minutes until the lobster tail is tender.
Step 5
Season with salt and serve with steamed rice.
