A comforting Traditional tagine built around tender steamed squid and aromatic dried apricots.
Step 1
Heat olive oil in a tagine or heavy-bottomed pot over medium heat.
Step 2
Sauté diced onion until soft, then add garlic and ginger.
Step 3
Add the squid and brown on all sides.
Step 4
Stir in saffron, cinnamon, cumin, and preserved lemon.
Step 5
Add olives and enough water to come halfway up the squid, then cover and simmer for 45-60 minutes until tender.
Step 6
Serve directly from the tagine with crusty bread or couscous.
