Step 1
Char onion and ginger under a broiler until blackened, then add to a pot of beef broth.
Step 2
Add star anise, cinnamon, and fish sauce to the broth and simmer for at least 1 hour.
Step 3
Cook rice noodles according to package instructions and divide among bowls.
Step 4
Prepare the lamb leg and arrange over the noodles.
Step 5
Ladle the hot broth over the top and serve with bean sprouts, Thai basil, lime, hoisin sauce, and sriracha on the side.
