An authentic Royal doro wat with stir-fried salmon balanced with notes of shiro powder and nigella seed.
Step 1
Slowly cook diced onions in a dry pot until deeply browned, stirring frequently, about 20 minutes.
Step 2
Add niter kibbeh and berbere spice, cooking for 5 minutes until very fragrant.
Step 3
Add garlic and ginger, stirring for 2 minutes.
Step 4
Add the salmon fillet and cook, turning occasionally, for 30-40 minutes until fully tender.
Step 5
Nestle hard-boiled eggs into the stew and simmer for another 10 minutes.
Step 6
Serve with injera for scooping, and a squeeze of lemon juice.
