Step 1
Cook diced onion slowly in niter kibbeh until deeply browned.
Step 2
Add berbere spice, garlic, ginger, and tomato paste, cooking for 3 minutes.
Step 3
Add rinsed red lentils and water, bring to a boil, then simmer for 25-30 minutes until lentils are soft and the stew is thick.
Step 4
Season with salt and serve with injera.
